Frankie Gonzalez's pride and passion is palpable, as it pours out of him in every conversation and gesture. His meticulously and creatively processed nano-lots this year, follow an exciting previous season where we worked hands on, providg feedback on small-scale experiments. Frankie has demonstrated his scientific knowledge and unwavering commitment. Despite replanting his farm with hybrid coffee varietals obtained from renowned programs, he encountered challenges with his coffee's sugar concentration, measured by Brix %. Determined to overcome this, Frankie began experimenting with alternative fermentation protocols to enhance the breakdown and retention of natural sugars in the coffee fruit. In the latest season, he went even further by introducing exotic fruits like guavas and pineapple grown on his farm to reach his desired Brix numbers. The results have proven thought-provoking, sometimes subtle, often astonishing, and consistently exciting. His nano-lots showcase the remarkable diversity of flavors achievable within a single farm and exemplify the potential for deep processing knowledge to empower small farmers while challenging traditional perceptions of Puerto Rican coffees.
