Brewing Guide: Unlock Your Coffee’s Full Potential. 

From seedling to bag, we strive to offer you radical traceability, into the careful, and painstaking processes of ensuring an unforgettable coffee experience. Alas, there is still time to mess it up! For this last step, there are a few things you should know as a home brewer, to make sure you’re bringing out the best in your beans. 

Brewing cheat sheet :

Filter-1:15. (1oz:14oz) 

200-208°

2-3min. 

20g-30g dose. 

Medium grind. 

Espresso-1:2– 1:2.5. (1oz:2-2.5oz)

30-40 seconds. 

18g-20gdose. Fine grind. Press-1:15.

(1oz: 14oz) 200-

208°. 6-8min. 20-

60g dose. 

Coarse grind.

In-Depth brewing instructions:

Espresso Brewing (1:2 Ratio, 19g Dose):

1. Grind 19g of Forgotten Forest specialty coffee to a fine consistency, similar to table salt.

2. Preheat your espresso machine and portafilter.

3. Distribute the coffee grounds evenly in the portafilter and tamp with consistent pressure (~ 30 pounds of pressure, similar to firmly pressing a remote button)

4. Insert the portafilter into the espresso machine and start the extraction.

5. Aim for a brewing time of approximately 30 seconds, resulting in a final yield of 38-40g of espresso.

6. Adjust the grind size, dose, and extraction time to achieve the desired flavor profile.

Pour Over (V60 & Origami style)

(1:15 Ratio, 20g or 40g Dose):

1. Boil water to a temperature of around 93°C (200°F).

2. Place a V60 or Origami dripper on top of your cup or server.

3. Insert a filter and rinse it with hot water to remove any paper taste.

4. Discard the rinse water and add 20g or 40g of Forgotten Forest coffee grounds to the dripper.

5. Start a timer and pour twice the weight of coffee (40g or 80g) in water, evenly saturating the grounds.

6. Allow the coffee to bloom for 30 seconds, then slowly pour the remaining water in a circular motion.

7. Aim to complete the brewing process in approximately 2-3 minutes.

8. Adjust the grind size, dose, and pouring technique to achieve the desired flavor profile.

French Press (1:15 Ratio):

1. Boil water to a temperature of around 93°C (200°F).

2. Coarsely grind 15g of Forgotten Forest coffee for every 225ml (8 fl oz) of water.

3. Add the coffee grounds to the French press.

4. Pour hot water over the grounds, saturating them completely.

5. Stir gently to ensure even extraction.

6. Place the plunger on top of the French press but do not press down.

7. Allow the coffee to steep for 4 minutes.

8. Slowly press the plunger down to separate the grounds from the brewed coffee.

9. Pour and enjoy the rich flavors of Forgotten Forest coffee.

AeroPress:

1. Boil water to a temperature of around 93°C (200°F).

2. Grind 15g of Forgotten Forest coffee to a medium-fine consistency.

3. Assemble the AeroPress with a paper filter and pre-wet it with hot water.

4. Add the coffee grounds to the AeroPress chamber.

5. Start a timer and pour approximately 225ml (8 fl oz) of hot water over the coffee.

6. Stir gently for 10 seconds to ensure even saturation.

7. Attach the plunger and press down slowly for 20-30 seconds.

8. Dilute the brewed coffee with hot water to taste, if desired.

9. Enjoy the unique flavors of Forgotten Forest coffee.

Mocamaster Coffee Machine:

1. Fill the water reservoir of your Mocamaster with fresh, cold water.

2. Grind 60g of Forgotten Forest coffee to a medium consistency.

3. Place a paper filter in the brew basket and pre-wet it with hot water.

4. Add the coffee grounds to the filter.

5. Position the brew basket over the carafe and start the brewing process.

6. The Mocamaster will automatically brew the coffee at the optimal temperature and extraction time.

7. Once the brewing is complete, remove the carafe and serve the delicious Forgotten Forest coffee.
